Information on sustainability in our kitchen
¹ In our patisserie and in the production of our cakes, we only use Original Beans chocolate coating, which is known for its high quality and sustainable production. These fine chocolates not only contribute to the refinement of our delicacies, but also support responsible cultivation and fair trade. ² ShioMizu® Aging is a patented aging process developed by David Schrand in 2017, drawing on eatventure’s expertise in dry aging since 2009. This method offers unique benefits for steaks: it improves the flavor, crust and tenderness of the meat. Maturing takes 6 to 8 weeks, depending on the cut. During this time, the steak is sprayed with a primeval sea salt brine at regular intervals. This salt brine, which is used for maturing, is called ShioMizu, which means “salt brine” in Japanese. Japanese cuisine is known for its simplicity, purity and quality, which emphasizes the natural taste – this is exactly what happens with ShioMizu® Aging: It enhances the quality of the meat and brings out the best in good meat. This special maturing method not only raises the taste of the steak to a higher level, but also makes it perfectly tender. Connoisseurs and steak novices alike should definitely try this maturing method. It is not without reason that the meat refinement method can be found in meat sommelier training courses and teaching content throughout Germany. ShioMizu® Aging is therefore a true refinement of the steak and an absolute upgrade for any premium meat from Germany.
